The ingredients needed to make Fish in coconut gravy:

  2. Make ready 1 mango Raw
  3. Get 1 cup Coconut milk
  4. Take 8 Shallot
  5. Get 1 Ginger big
  6. Take 4 Green chilli
  7. Take 8 Curry leaves
  8. Make ready 2 Tbsps Coconut oil
  9. Get 1/2 Tsp Turmeric
  10. Prepare 1 Tsp Chilli pwdr
  11. Take to taste Salt

Add the ground spices and fry on low heat for five minutes. Push the mixture to the side of the pan and place the fish in a single layer in the center. In a Kadai, add oil and when it is hot, add mustard seeds. When they start spluttering, add the curry leaves.

Instructions to make Fish in coconut gravy:
  1. Slice the shallots.
  2. Chop ginger & green chillies.
  3. Heat oil in an earthen /steel pot.add half of the sliced shallots & fry.when it starts to brown,add the curry leaves & fry.remove the fried shallots & curry leaves from oil & set it aside to garnish.
  4. Add the remaining shallots sliced & chopped ginger & chillies to the oil & sauté.once sautéed,add turmeric & chilli pwdr to this & sauté on medium heat.add 2 tbsp water to this sothat the masalas don't burn.once the oil seperates,add 1/2 cup water to this.
  5. Add the raw mango slices & salt to this.when it starts to boil,add the fish pieces, & cover & cook for 2 minutes.now turn the fish pieces & cover & cook for few minutes.
  6. Now reduce the flame & add the coconut milk.when this starts to boil,turn off the stove & add the set aside fried shallots & curry leaves

Fish curries in Sri Lanka usually feature coconut or coconut milk. I have used tomato and tamarind as souring agents. I added the tomato to give this fish curry a little bit of sweetness to take the edge off the sourness. In Sri Lanka, most of the fish curries used to be cooked in an earthenware pot (Clay pot). Shallow fried fish submerged in creamy coconut and tomato gravy, absolutely delicious… Every time I cook with fish, I try to make it differently.
