It tastes best with Paratha (Flatbread) and steamed. Egg roast is a masala egg recipe in which boiled and peeled eggs are nicely roasted in onion tomato masala gravy. This is usually called as nadan mutta roast in some parts of south india and the gravy made is a spicy onion tomato gravy into which few spices are added and cooked well… A spicy Kerala style egg dish where boiled eggs are cooked in roasted onion and spice gravy. - For the Egg Roast. First hard boil the eggs. Remove the shell and give slit on it.
- In a pan add oil(generally coconut oil is used, but I have used normal oil) add the sliced onion. Add salt and sugar so that it gets cooked fast and get caramelized also. Keep stirring till it turns pink. Then add the ginger and garlic paste. Saute it. Add the curry leaves and green chiles. Saute it.
- Now add turmeric, red chilli powder and Kashmiri red Chile powder. Mix them well. Now add the chopped tomatoes. Let it cook till it gets mushy. Now add garam masala. Salt to taste. And very some water so all the masala gets coated easily. Now add the slit eggs and keep stirring in high flame for 3-4 min. Now put off the flame.
- Now for the paratha. Take the maida add sugar, salt and baking powder. Mix well. Now add the ghee again mix it well with the maida now the milk again mix. Now add warm water gradually and make the soft dough. Now add oil and knead it for more 7-10 mins. Grease it with oil and cover it with a wet cloth for 1 hour.
- Now take the dough again make it into small ball tuck it round. Keep it again for resting for 15-20 mins. Then using oil roll it into thin sheets. Apply oil on one side and dust some flour. Now roll it like we used to make paper fans. Stretch it then from one side roll it. Rest it.
- Now roll it into round shape (apply oil on the surface). Then on the tawa fry it. It should be crispy layers.
Now it has become a part of Kerala breakfast, a native dish of Kerala. Cover with the lid and cook for one minute over very low heat. Egg roast goes well with appam, idiyappam, chapathi and porotta. Nadan mutta roast is one item which you can see in almost all restaurants menu card in Kerala. It goes well with Appam, Kerala parotta, chapatti etc.
