- Add 1 cup rewdi to 1 cup milk & let it melt completely. Keep aside.
- 1 cup rice flour, a pinch of salt & water to form a thick dough. Make small balls from the dough & flatten using the finger. Cover with moist cloth & keep aside.
- Melt 2 tbsp homemade ghee in a pan. Add 2 tbsp mawa or khoya, 2 cups milk & let the khoya melt. Add the rewdi mixture, 1 tsp cardamom powder, 1 cup sugar & mix well.
- Bring the mixture to a good boil. Add the flattened rice flour balls one by one & let them cook in the boiling mixture. Once cooked, garnish with some chopped cashew-nuts & pistachios. Serve hot or chilled.
Kheer is a creamy rice pudding and it's one of my favorite desserts to make and eat! Kheer requires a few essential ingredients: rice, milk and sugar. We almost always have those three ingredients at. For all my kheer recipes, I tend to used condensed milk, not just milk. It gives it a richer, fuller flavour I think.
