  1. Take for dough
  2. Make ready all purpose flour
  3. Make ready ghee
  4. Prepare or more cold water
  5. Get for the paste
  6. Make ready rice flour
  7. Make ready ghee

  9. Take for sugar syrup
  10. Take sugar
  11. Take water
  12. Make ready oil for deep frying
  13. Prepare extra flour for dusting

Instructions to make Khaja:
  1. Firstly, in a bowl take flour and ghee
  2. Crumble and mix well
  3. Now add water and knead a smooth and soft dough
  4. Cover and rest the dough for 15 minutes
  5. After 15 minutes, knead the dough again for 1 minute
  6. To make paste, mix rice flour, ghee and oil and make a smooth paste
  7. On the kitchen counter, sprinkle little flour
  8. Pinch a dough ball and roll it thin on the counter
  9. Make 4 thin rotis like this
  10. Apply the prepared paste on first roti
  11. Keep the second on top of this
  12. Apply the paste again
  13. Keep the third roti on top
  14. Again apply the paste on third roti amd keep the fourth roti on top
  15. Roll this into a log
  16. I made 8 rotis out of this dough and 2 logs
  17. Now with a knief cut the log diagonally
  18. Now take each piece and press it lightly on your palm
  19. Heat oil for deep frying in a kadai
  20. Deep fry all the khaja on low flame till goldem brown and crisp
  21. Meanwhile make sugar syrup
  22. In a pan add water and sugar
  23. Boil the sugar syrup until 1 string consistency is attained
  24. Switch off the flame and keep aside
  25. When khaja becomes goldem brown and crisp, remove from oil and drop the khaja in sugar syrup
  26. Let it soak in warm syrup for 5 minutes
  27. Drain these and arrange on a plate
  28. Once cooled, enjoy!
