Instructions to make Khaja or jive goja:
  1. Take the flour in a big bowl and add 100 gms of ghee to make moyan..it should be such consistency so that maida can be gripped.
  2. Now add warm water in the maida to make soft dough and keep aside for 20 mins covering it.
  3. Take the rice powder or extra maida and mix with ghee and make it a batter not very much flowing consistency but liquid form
  4. From the dough make three part and from each part make three big rotis. So there should be 9 rotis
  5. Take one roti apply the mixture evenly and put a roti then apply again the mixture and put one roti and then again apply the mixture.
  6. Now roll the rotis with some pressure so that no air inside.
  7. After that cut the roll with 1/2 inces gap and then press each gap in length wise and make khaja
  8. Fry each khaja in deep fry in low medium heat upto golden brown.
  9. Keep it on news paper to soak the excess oil and after that just dip each khaja in powdered sugar and keep aside
  10. Your khaja or mouthwatering jive gaja is ready and can keep in a air tight container for 2 to 3 weeks.
