- In a pan bring water and sugar to a boil over medium heat. Turn the heat to low and stir continuously until sugar dissolves completely and the syrup is clear with sticky consistency. Add cardamom powder and turn off the heat.
- Place the flour (maida), salt, baking powder and oil together in a bowl. Mix well and knead it to a smooth dough by adding water as needed. Cover and keep it aside for 30 minutes.
- Make 8 balls of the dough, equal in size. Roll out a ball to a big chapati. Cut it into three round shaped small puris with the help of a cutter mould (as shown in pic).
- Now take these three puris and put all on one another on a board. Half- fold the bunch and lightly press with your thumb at the centre. Pin it with a toothpick near the edge end to avoid opening while deep frying. Repeat the process to make similar khaja with rest of the dough balls.
- Heat oil in a pan. Deep fry the khajas till brown on a medium heat.
- Dip the khajas in pre-prepared warm sugar syrup for 10 minutes.
- Transfer them to a serving plate and serve.
Use the star shapes to add fruitiness to a green salad or to decorate a cheese or snack platter. After removing the seeds, the fruit can also be pureed or juiced and added to smoothies and drinks. Sweet Khaja is a Bihari sweetmeat or mithai often stuffed with a khoya or dry fruit filling, deep fried in ghee and then dunked into a fragrant In other parts of the country Khaja is known by different names and has many varieties such as Pheni in Orissa, Badusahi or Padusahi or Chandrakala in South India. Madatha Khaja is a delicious flaky pastry dipped in sugar syrup, quite similar to our Badusha except its shaped out of a layered dough. Cut them slightly in an angle to give a diamond shape.
