- Make ready 250 gms besan
- Get 500 ml water
- Get 4 spoons neem flower powder
- Prepare 8 spoons Eno powdee

Khaman Dhokla is a soft and spongy Gujarati snack which has a slightly sweet and tangy taste. This recipe is quite healthy as is made by steaming besan (chickpea flour). Steps to make Khaman:
- In a vessel add 500 ml water approximately, add 2 tablespoons sugar and salt as per taste and stir it continuously till sugar dissolves in water.
- Add besan to this mixture slowly and gradually and make a batter of thin consistency like dosa batter.
- Fill a pan with enough water so as to steam the batter, put Channi with small holes like aata Channi inside the pan and put pan on stove
- Now grease a plate with oil and pour this batter to the plate.
- Put plate on the pan which we have put on stove and cover the pan with a lid. Put a heavy weight on the lid of the Pan so that steam doesn't go out.
- Steam the batter for approximately 20 minutes. After that remove the lid and check whether khaman is properly done with tooth pick. If batter doesn't stick to tooth pick, khaman is done.
- Now take a vessel, again add water and sugar to it and stir it till sugar dissolves. Pour this batter over khaman. This is very important step as it makes khaman watery and very spongy. So don't skip this step.
- Now, give tadka to the khaman prepared. Add oil in a small pan, put mustard seeds, let them crackle then add finger chopped green chillies, curry leaves, pinch of hing to it and turn off the stove. Add red chilli powder to the tadka and pour this tadka over khaman
- Decorate the khaman with coriander leaves and cut them into small pieces.
- Enjoy the delicious khaman.
