Uttapam is like a thick Dosa or Spicy pancake topped with vegetables. If you are serving this as a traditional Uttapam serve this with sambar and coconut. The main flavouring comes from onion, so add a good amount of them. I prefer making this in a non stick tawa so i can use less oil.

Steps to make Rava onion uttapam:
  1. Mix curd, Sooji, salt, jeera and give a good mix. Then add water to make smooth batter. Add baking soda, mix well and rest for 10 min.
  2. Chop onion finely. Mix coriander, green chilli, salt and saambhar powder.
  3. Heat non stick pan. Put some drops of oil and pour batter on it making round shape. Sprinkle onion masala on it.
  4. Cook for 2 min then turn upside down and cook from other side.
  5. Cook till done and your uttapam is ready. Serve it with coconut chutney, green chutney or tomato ketchup.

There is no raising agent in this like baking soda, so it is less fussy. Rava mixed with onion, tomato and yogurt to make this quick uttapam.
