The ingredients needed to make Chicken Chap:
  1. Make ready 2 whole chicken legs
  2. Prepare 50 gm cashew nuts
  3. Take 50 gm poppy seeds
  4. Take 1/2 cup hung curd/Greek yogurt
  5. Get 1 big onion paste
  6. Take 1 tablespoon Ginger-garlic paste
  7. Prepare 1 teaspoon red chilli powder
  8. Take 1 teaspoon salt
  9. Take 1/4 teaspoon sugar
  10. Make ready 5-6 whole peppercorns
  11. Prepare 2 bay leaves
  12. Make ready 1 inch cinnamon stick
  13. Make ready 2-3 green cardamoms
  14. Make ready 1/2 teaspoon rose water
  15. Make ready 2-3 drops mitha attar
  16. Make ready 7-8 strands saffron
  17. Make ready 1/2 cup ghee
  18. Prepare 2 tablespoon refined oil
  19. Take 1/2 teaspoon sahi garam masala powder

Steps to make Chicken Chap:
  1. First clean the chicken pieces & make 2-3 deep gashes over the chicken pieces. Now marinate the chicken pieces with yogurt,onion paste, cashew-poppyseed paste,red chilli powder,sahi garam masala, Ginger-garlic paste, salt,sugar & 2 tablespoon of oil. keep this marinated for at least 2 hours in the refrigerator.
  2. After 2 hours heat up the ghee on a pan then temper it by adding peppercorns, cinnamon, cardamoms & bay leaves.wait until the aroma comes out. Then place only the chicken pieces into the ghee & fry both side of the piece for 3-4 minutes.
  3. Now add the marinade to the pan & spread evenly over the chicken pieces. You don't need to stir much for this recipe, just turn the chicken pieces occasionally. Now cover up the pan & let the chicken cook for 20 minutes. Uncover the pan in between to check if the gravy stuck to the bottom or not. Keep the flame between medium to low.
  4. After 20 minutes check if the chicken is done or not, then add saffron soaked warm water, rose water & mitha attar & cook for another 10 minutes…keep the flame low.
  5. Once the chicken pieces are properly cooked, turn off the flame & serve it with paratha or biriyani.
