- Meanwhile add eno to batter and mix well.Don't over mix the batter.
- Apply few drops of oil with the help of tissue paper on hot tawa.
- Lower the heat and pour a ladle of batter and spread gently.Don't spread too much.The uttapam should be thick.
- When the batter is still raw add the prepared topping,gently press the topping with the spatula so that it stick to the batter.
- Drizzle some oil around the corners of uttapam.
- Once the bottom has turned golden brown(for approximately 2-3 minute)flip the uttapam to the other side and cook again(approximately 1-2 minute).
- When the other side is cooked, remove the uttapam from the tawa and serve hot with tomato thokku and coconut chutney.
