Instructions to make Dal Bukhara/ Dal Phaktooni:
- In a mixing bowl take whole black lentils clean and wash thoroughly.
- Add enough water and Soak it about 8-10 hours or overnight.
- In a pressure cooker add soaked whole black lentils, salt, 1 tsp oil and water to boil until they are well cooked.
- In another pan heat the 100 gm butter allow to melt it do not burn it
- Add finely chopped onion, Ginger and Garlic paste stir well.
- Now add tomato purée saute well they turns to thick consistency.
- Next Add cooked whole urad, some water then mix well and allow to boil them.
- When they starts boil add chilli powder, roasted cumin powder, coriander powder, mix well.
- Next add salt according to the taste and add 1 cup cream mix well. Further Add Garam masala and dry methi leaves mix well.
- Now boil it for 5 mins until they well combination with all together.
- Lastly add fresh cream 1 tbsp and chopped coriander leaves.
- Finally Dal Bukhara / dal Pakhtooni is ready. and Serve hot with Rice.
Dal Bukhara is a rich, hearty, delicious and. Dal Bukhara is famous all over India. Its the signature dish of the Bukhara, a restaurant at the ITC Maurya Hotel in New Delhi. It took me a LONG time to recreate the recipe. This recipe is technically original, as I actually have no clue what recipe the chefs at the Bukhara use.
