  5. After 20 minutes check again for consistency of batter.
  6. Rava absorbs water as time goes by and due to that batter becomes thick after some time.
  7. If required add extra water and mix well batter is thick but of spreadable consistency.
  8. Heat a non -stick tawa over medium heat.
  9. Meanwhile add eno to batter and mix well.Don't over mix the batter.
  10. Apply few drops of oil with the help of tissue paper on hot tawa.
  11. Lower the heat and pour a ladle of batter and spread gently.Don't spread too much.The uttapam should be thick.
  12. When the batter is still raw add the prepared topping,gently press the topping with the spatula so that it stick to the batter.
  13. Drizzle some oil around the corners of uttapam.
  14. Once the bottom has turned golden brown(for approximately 2-3 minute)flip the uttapam to the other side and cook again(approximately 1-2 minute).
  15. When the other side is cooked, remove the uttapam from the tawa and serve hot with tomato thokku and coconut chutney.
