  1. Take semolina and curd in a mixing bowl.
  2. Add half cup water in it. Mix well and keep aside for ten minutes.
  3. After that Add onions, tomatoes, capsicam, carrots, green chillies, and coriander leaves in it. Mix well.
  4. Add salt, black pepper and red chilli flakes in it. Mix well. Check consistency, If required add more water for perfect consistency.
  5. Heat one spoon oil in a tadka pan on low flame.
  6. Add mustard seeds and let them crackle.
  7. Add curry leaves and saute for one minute. Switch off the flame.
  8. Add this into the semolina batter.
  9. Heat a uttapam pan or tawa on medium flame.
  10. Add few oil drops of oil on the surface of tawa.
  11. Pour a ladle full batter on uttapam pan and gently spread it with the help of ladle.
  12. After one minute colour or top suface change from white to off-white.
  13. Flip it gently and cook another side.
  14. After one minute flip it again and cook for 30 seconds.
  15. It's ready. Transfer it into serving plate.
  16. Serve hot with tomato chutney or coconut chutney.
