- Pressure cook peas, peeled potato, add turmeric and salt. Cook for 5-6 whistles. I have used soaked peas. If using fresh peas 2 whistles is enough.
- Separate the potato and mash without any lumps. Slightly mash peas and mix well with mashed potato. Keep it for later use.
- Heat 1 teaspoon of oil in a wok add ginger, garlic, green chillies and fry for 30 seconds. Add clove, cinnamon and onions fry for a couple of minutes. Add tomatoes and fry till a little soft.
- Add 1 spoon full of peas and grind to smooth paste.
- Heat oil in a wok add grounded masala paste and cook till raw smell goes off. Add 2 cups of water and boil. After masala starts boiling add mashed potatoes and peas.
- Add garam masala, chilli powder and adjust the salt. Boil for 30 minutes in low flame. It tastes better when prepared beforehand and reheat before serving. Consistency should be thin. It will get absorbed and gets thicker while plating.
- Mix chilli powder, garam masala, chat masala and salt
- Take 5 pooris in serving plate or bowl crush them. Add 2-3 spoonful of masala with peas on pooris. Add some onions, carrot and tomatoes on masala.
- Add boondi, sev and chilli powder mix, add chopped coriander leaves. Squeeze little lemon juice over and serve hot.
- If mixture feels dry add more masala mix and eat. Pooris are available in market similar to panipuri pooris but slightly thicker. Can prepare at home using all purpose flour and rawa. Longer masala is cooked tastier it will be.
