  6. Take 1 tablespoon oil while kneading
  7. Take 2 cup oil for frying
  8. Take Alu Saag
  9. Get 4-5 boiled potatoes
  10. Get 3 tomatoes
  11. Prepare 2 tablespoon oil
  12. Make ready 1 green chillies chopped
  13. Take 1 teaspoon Mustard seeds
  14. Get 1 teaspoon cumin seeds
  15. Make ready Pinch hing/asafoetida
  16. Take 1 teaspoon Spicy red Chilli powder
  17. Make ready 1 teaspoon Kashmiri red chilli powder
  18. Prepare 2 teaspoon Coriander powder
  19. Make ready 1/8 teaspoon Turmeric powder
  20. Prepare to taste Salt
  21. Make ready 1 teaspoon powdered jaggery
  22. Get 2 tablespoon Chopped Coriander leaves

Instructions to make Gujrati Style Alu Saag with Masala Poori:
  1. In a bowl mix flour, salt, chilli powder, carom seeds, oil and knead a tight dough, apply some oil and keep covered for 15-20 minutes.
  2. Pinch a lemon sized ball out of the dough, smooth it and roll a thick circle out of it, use oil while doing so.
  3. Heat oil in a pan, fry pooris until golden on both sides.
  4. Heat oil for the saag, add cumin and mustard seeds and let them splutter.
  5. Add green chillies and tomatoes.
  6. Add all the spices, salt and seasonings. Cook until oil seperates from it.
  7. Add chopped boiled potatoes and a tablespoon of chopped coriander leaves.
  8. Let fry for 2 minutes.
  9. Add 1 cup of hot water, mix well, cover and cook until water cooks and the curry comes together.
  10. Add jaggery and continue cooking.
  11. Once potatoes softens mash them a little so starch mix in the water and gravy thickens.
  12. Gravy has thickened add coriander leaves.
  13. Serve hot with pooris.
