Instructions to make Bajra Ghens (ઘેંસ):
  1. Sprinkle Water and Slightly wet Bajra and wheat and keep aside for 5minutes.
  2. Coarsely Grind it in a mixture jar and strain it through wheat strainer.
  3. Toss and remove the chaff of the grains by winnowing it. A traditional process where you toss the grain in the air to remove lighter particles or outer layer of the grains.
  4. Take a non-stick vessel and roast the grains for a minute.
  5. Add buttermilk and stir well.
  6. Add salt as per taste when it gets warm. Mix well.
  7. Stir and cook on a medium and slow flame gradually till the grains gets softer and mix well with the buttermilk.
  8. Add water if required. Adding warm water is batter.
  9. Put off the gas once the grains are cooked properly and the consistency is as good as khichdi.
  10. Serve Hot. Garnish with coconut.
  11. Ghens can be served in three ways:
    1. With Ghee
