Steps to make Kosai(Akara):
- Soak beans for 5mins and smash it inside a mortar and pestle to remove shafts.
- Pour beans into a large bowl and add enough water,squeeze and remove shaft/skin of the beans, until beans is clean.
- Wash and cut Onions,wash rodo and add into beans.
- Grind the beans with little water until a smooth paste is form(the paste should not be to thick nor watery).
- Add salt and seasoning to ur own taste,and mix well.
- Use a spoon to drop beans paste into hot oil,continue dropping until pan is full,observed a reddish brown colour at the bottom of the akara,and then turn the other side to allow it fry too
- When both side form a reddish brown colour then your akara is done,use a perforated metal spoon to park ur akara and pour into a colander,to allow excess oil drops.
- Serve hot with Kunu,tea or Akamu….Enjoy
