When daal mixture becomes dry, transfer it into another bowl and let it cool. Grease a baking tray, place the kachoris in it, brush them with a little ghee and bake in the preheated. - Knead a smooth dough out of all the ingredients and set aside for 20 minutes. Soak daal for 3-4 hours. Drain and dry roast until light brown without any burnt smell. Grind all using a dry jar attachment of your grinder to a little coarse powder. It is ok if whole daal remains here and there.
- Add coriander leaves and Dry Mango powder or Amchur. Mix well and the filling is all ready to use. Divide the dough into medium sized balls and roll each into a disc.
- Place a generous amount of filling on each and shape into a round kachori bringing all the edges by pleating to the top and securing neatly with a pinch. Deep fry in hot oil on a low flame until done on both the sides. I have made these with both Wheat Flour or Aata and All Purpose Flour or Maida too.
