The ingredients needed to make Kachori:
  1. Make ready FOR KACHORI DOUGH :
  2. Make ready 100 gms Atta (wholewheat flour)
  3. Prepare 250 grams Maida (all-purpose flour)
  4. Take 1/2 tsp Baking powder
  5. Make ready 2 tbsp Oil
  6. Prepare 1/2 glass Water/as much required
  7. Get 1 tsp Salt /according to taste
  8. Take for STUFFING :
  9. Make ready 200 grams Urad dal - soaked overnight
  10. Get 1/2 inch Ginger
  11. Get 2 Chilies
  12. Take 1 Big cardamom
  13. Take 1 Dry red chilli
  14. Get 1 1/2 tsp Saunf (Fennel seeds)
  15. Get 1 tsp Jeera (cumin) seeds
  16. Get 1/2 tsp Hing (Asafoetida)
  17. Prepare 1 tsp Jeera powder
  18. Get 1 tsp Cinnamon powder
  19. Take 2 tsp Salt /according to taste
  20. Take 3 tbsp oil
  21. Take Other INGREDIENTS :
  22. Take 350 ml Oil for frying Kachori

This savory lentil filled pastry is best enjoyed with spicy potatoes - a popular breakfast/snack from northern India! It's amazing how many of our memories are associated. Onion Kachori are commonly known as Pyaaz ki kachori is an amazing snack dish. This is made by stuffing a yummy onion mix in the kachori and fried.

Instructions to make Kachori:
  1. Soak the Urad dal in bowl in enough water overnight.
  2. In a mixing bowl add atta, maida, baking powder and salt. Give a little mix and add oil. You will get a breadcrumb like texture in the mixture.Now add water in parts and knead the dough till soft. Now take little amount of oil in your palm and gently apply it over the dough. Cover it and let it rest for 30 mins.
  3. Now drain out all water from the bowl in which you soaked the dal.
  4. Pour the Urad dal, Green chilies, ginger, big cardamom in grinder jar and grind it. The mixture should be coarse or semi fine in texture. If you need water only then add 1 tbsp in the paste otherwise there is no need.
  5. Put 3 tbsp oil in hot kadhai and put dry red chilli, Saunf, jeera and hing.
  6. After few seconds add the mixture.Now give it a mix. Add jeera powder, Cinnamon powder and salt. Mix it again. Stir it until it doesn't get stick with the kadhai. Your stuffing is ready.
  7. Now make smalls balls from the dough.Now take one ball and press the centre with your index finger. Make it in the shape of a katori (bowl).
  8. Place the stuffing inside it and now pleat and join the edges bringing them together in the centre. Press the top. Make sure to seal it properly.
  9. Now roll it into a circle. Make the other in the same way.
  10. Heat oil in a kadhai for deep frying. The oil must be heated properly. After that put the gas on medium flame.
  11. Now put your Kachori in it. After one gets golden brown turn it. Now put the gas on low - medium flame.Gently nudge it with slotted spoon, so that it starts puffing up. Let it cook from the other side too.
  12. Your Kachori is ready. Now take it out with the help of slotted spoon.
  13. You can serve Kachori with khatthi-methi imli chutney, Dhania chutney.
