- Make ready 1&1/2 cup Maida
- Prepare 2 tbsp Rice Flour
- Make ready 1/2 tsp Salt
- Prepare 1/2 tsp Ajwain
- Take 2 tbsp Oil for moyin
- Get As required Water for kneading dough

- Get 1 Cup Urad Dal (Soaked and Coarsely Grinded without water)
- Take 1/2 tsp Asafoetida
- Get 1 tsp Cumin Seeds
- Prepare 2 tsp Coriander Seeds (whole)
- Prepare 1 tsp Fennel seeds
- Take 1 tsp Aamchur Powder
- Prepare 1 tsp Garam Masala
- Prepare 1 tsp Red Chilli Powder
- Take 1/2 tsp Coriander Powder
- Get 1/2 tsp Turmeric powder
- Take As per taste Salt
- Take 1/2 tsp Kasuri Methi
- Get As required Oil for frying dal
- Get For frying Kachori -
- Take As required Oil for frying
- Make ready For Serving kachori:

- Get As required Curd

Crispy, flaky and delicious Urad Dal Kachori is my all time favorite snack. An irresistible and yummy meal filled with savory lentil stuffing and spices. Urad Dal Kachori is generally served with Coriander Chutney, Tamarind Chutney or Mint Chutney. You can also add curd along with chutneys to make a chaat.
Steps to make Urad Daal Kachori:
- For making Kachori Dough -
- Firstly, In a large bowl combine together maida, rice flour, salt, Ajwain and oil as moyin.
- Now start adding water bit by bit and knead a dough same as that of Chapati Dough that is not very tight and not very loose. We need for dought to be a bit moist but not very soft neither too tight.
- Now apply some oil on the dough and keep aside for 20 mins. Meanwhile prepare Filling for Kachori.
- Kachori Filling -
- Soak Urad Dal for 4-5 hours. Drain the water and Coarsely grind urad dal in a grinder without adding water. Keep Coarsely Ground Urad Dal aside.
- In a pan add cumin seeds, coriander seeds and fennel seeds now start roasting it on a very low flame. Take it out in a mortar pestle and Coarsely grind it. Masala for kachori is ready.
- Now heat oil in a pan add Asafoetida (a bit more than usual because urad dal will not cause any gastric problem if it is combined with Asafoetida).
- Now add Coarsely Ground Urad Dal start stirring add Kachori Masala that was prepared earlier, add red chili powder, coriander powder, turmeric powder, Aamchur Powder and garam masala.
- Stir everything properly and add salt. Keep stirring till our filling is cooked. Do not cover or add water. We need masala to be completely dry.
- Now add Kasuri Methi and switch off the flame. Kachori filling is ready.
- For Frying Kachori—
- Heat oil in a kadhai. Once the oil is hot lower the flame on lowest heat.
- Take a small ball size portion from the dough give it a Katori shape with the help of your hands.
- Add 2 spoonful of kachori filling in the dough. Seal it and flatten it with the help of your hands. It should not be very thick or thin.
- Make all kachoris and add it slowly in oil. Do not increase the flame while frying the kachori. Keep flipping in between. It takes around 6-7 mins for one batch of kachoris to be done.
- Take out fried kachoris on a Paper towel.
- Assembling Kachoris–
- In a plate - Take kachori prick it in between and make a hole. Now add tamarind date chutney, add curd, add onions and lastly add barik sev.
