  1. Soak 1cup moong dal in water for 2 hours. After two hours drain the water and make a course paste of the dal in a mixer.
  2. Heat 4 tablespoons oil and add asafetida and cumin seeds. Next add in finely chopped green chilies. Sauté for a while.
  3. Next add in the fennel powder, turmeric powder, red chilli powder, cumin powder and coriander powder, crushed cloves and black peppercorns and saute for a couple of minutes. Next add in the coarsely ground moong dal.
  4. Then add roasted Besan and salt. Cook it till all the water evaporate and you will get the dry masala
  5. Next let’s make a dough.
  6. Take all purpose flour in a deep pan. Add salt, carrom seeds and ghee to it.
  7. Knead medium consistency dough(not to soft like chapatis and not too hard like puris) using cold water.
  8. Knead the dough at least 10 minutes. Cover the dough and keep it aside for 15 minutes
  9. Meanwhile add oil In kadhai and let it hot on medium low flame. For frying kachoris we don’t need hot oil.
  10. Take a small portion of dough. Make a ball out of it. Flatten it using your fingers. To make a bowl shape. Fill 1-2tsp of moong dal masala in it. Cover it from all side properly. Make sure there should be no openings.
  11. Flatten it lightly with your fingers. Fry kachoris in low medium flame 🔥 till golden brown.
  12. Enjoy with tamarind and coriander’s chutney.
