  2. Get 2 cup All-purpose flour
  3. Take 3 tbsp Warm oil

  5. Make ready as required Lukewarm water as to make very soft dough
  6. Take 1/2 cup Yellow Mogar dal
  7. Make ready 1/2 tsp Whole coriander seeds
  8. Get as per taste Salt

  10. Prepare 1/4 tsp Cumin seeds
  11. Get 1 tsp Red chilli powder
  12. Get 1/2 tsp Turmeric powder
  13. Prepare 1 tsp Coriander powder
  14. Take 2 tsp Besan
  15. Prepare 1/2 tsp Sugar
  16. Get 3 tsp Oil to roast filling masala

Kachori is a very popular breakfast/snack in northern India. Add the soaked and drained dal to a pan on medium heat. Khasta dal kachori is made of maida crust stuffed with urad dal filling and deep fried. Daal kachori is a very popular Rajasthani snack.

Instructions to make Dal Kachori:
  1. In a dish take all-purpose flour. Add salt and warm oil.
  2. With both hands rub the dough properly and check that binding as of fist is formed. If fist is not formed add little more warm oil.
  3. Add lukewarm water and prepare a very soft dough. Cover the dough and keep aside.
  4. Wash yellow mogar dal properly and soak in water for six hours.
  5. After six hours drain all water of dal and crush mogar dal a little in blender. Remember not to make paste of dal. Churn a bit so yellow mogar dal is little crushed and we are able to see dal pieces.
  6. Take out crushed dal in a bowl.
  7. Take oil in a pan. Heat it.
  8. Add cumin seeds,hing, coriander seeds
  9. Once roasted add crushed mogar dal. Roast for twenty to twenty five minutes.
  10. Then add besan. Toss dal masala. Keep on sprinkling water in between so as to cook the crushed dal
  11. Roast dal masala till golden yellow.
  12. Now add turmeric powder,red chilli powder, coriander powder,salt, sugar. Roast for few minutes.
  13. Put off the flame - Cool the filling masala. Make small balls of masala of size smaller than table tennis balls
  14. Take dough and knead it well. Take little dough of size of table tennis ball
  15. Keep it on palm. Press it with another palm. Now take it on fingers of left hand and pressing with right hand fingers make a hollow in between.
  16. Keep masala ball in the hollow of dough. With right hand fingers bring extra dough on top. Remove the extra dough and seal the kachori properly.
  17. Press the kachori a little from centre and edges so as to give a disc shape. Keep aside.
  18. Prepare all kachoris from dough like this.
  19. Take a heavy bottom frying vessel and fill it half with oil. Less oil will make kachoris soggy.
  20. Now the Main tip is to put three to four kachoris in cold oil to make them crispy and market style. Put the sealed side at bottom. Now put on the flame on slow.
  21. After few minutes kachoris come up on the surface. Flip them.
  22. Keep the flame now medium.Deep fry.
  23. After few minutes Delicious golden crispy Dal Kachoris are ready.
  24. Take out the batch. Put off the flame and let oil cool. Put another batch in cold oil and then put on the flame.
  25. All kachoris come out to be crispy,of same size,shape and taste that of market
