Steps to make Mooli (Radish) Paratha:
- Grate the radish coarsely. Add 2-3 drops of oil to a pan and fry the radishes along with chopped green chillies. Add salt, red chili powder, turmeric, garam masala and aamchoor powder.
- Fry them until all the water evaporates from the radishes. Let this mixture cool down at least to room temperature and proceed to dough preparation.
- Add wheat flour, salt and sugar to a large bowl. Gradually add water and knead the dough to a semi-soft consistency.
- Take some oil or ghee into your hands and massage the dough with it and knead it till it gets to a firm yet elastic consistency.
- Make lemon sized balls of the dough and roll it once till the size of the bread is about your hand.
- Pinch a corner of the circle between your thumb and index finger almost to make a cone and fill the stuffing into it.
- Fold over the read end of the bread over this cone and pinch the ends together to close all the stuffing. P.S: I tried to attach pictures for reference.
- Now roll the bread gently towards edges, without applying too much pressure at the center.
- Fry it on a pan by adding oil/ghee. Enjoy with pickles or curd or chutney.
