These mango & coconut muffins are totally vegan and have a bright, fresh flavor from mango, lime, coconut milk, and coconut oil. I love to start my day with these bright mango coconut muffins! Steps to make Mango Muffins:
  1. First of all, In a mixing bowl take warm milk, sugar and ghee.
  2. Then add Milk Powder and whisk well together. Keep it aside.
  3. Meanwhile, heat a Kadhai, add one cup of salt in it and spread it with the help of spoon or spatula. And place the stand in it. (As shown in the pic) and place the plate too. Important Note : Cover it with the lid and Preheat the kadhai at least for 10 mins on medium high flame.
  4. Meanwhile, in another bowl - mix maida, sooji and baking powder. Sieve 2-3 times. The more you sieve, the softer your muffins will be due to aeration in flour.
  5. Once you done with sieving, add this flour mixture to wet ingredients. Gently fold all the ingredients. (Try to add flour mixture in small portions and mix).
  6. Now add curd and mix. Add mango emulsion and whisk well.
  7. Add Petha cherries and baking soda. (Add milk if mixture is too thick)
  8. Now grease the muffin moulds with oil or ghee. Pour the mixture in the moulds. Now open the lid of preheated Kadhai, place the filled moulds on the plate carefully, as the Kadhai is very hot. Now cover with lid. Let it bake for 15-17 minutes on low flame.
  9. After 17 minutes, open the lid and Check the muffins, with help of toothpick or knife if it comes out clean that means it's ready. Turn off the flame. Let it cool down. Decorate it as you like.
  10. I have used (1). honey + pink food color ; (2). 3-4 pieces Dark chocolate + 2tbsp of warm milk
