The ingredients needed to make Luchi - Bengali style Puri:
- Make ready 175 gms Maida/ All purpose flour
- Make ready 17 gms ghee
- Take 1 tbsp fresh cream
- Prepare 1/4 Tsp salt
- Get 1 Tsp sugar (powder it)
- Get Approx. 90 ml lukewarm milk/water*
- Get Vegetable Oil for deep frying the Luchi

Steps to make Luchi - Bengali style Puri:
- In a steel bowl or plate shift the flour and add all the ingredients except the milk or water.
- Mix all the ingredients with your hand till it becomes flacky and then add milk or water little by little as required and knead it into a soft dough (not over soft)
- Cover the dough with a cling film or damp /wet kitchen towel and let it rest for atleast 20 mins.
- Heat vegetable oil in a kadai, take little balls of dough,one by one apply little oil and flatten it with the help of a rolling pin and put it in the hot oil….heat the oil but lower the flame when you are putting the Luchi in the oil. When the Luchi comes up press gently with the slotted spoon/ spatula, in this way you will help the Luchi to inflate…..fry for few seconds.
- Flip on the other side (be careful of the oil when you flip). Fry for few seconds and take it out before it turns brown and keep it on a kitchen tissue paper to absorb the extra oil from it. Serve hot with Cholar Dal (as I have done) or aloo dum etc.. Fry the rest of the Luchi in this way.
- Note: * I prefer to knead with lukewarm milk than water as the Luchi kneade with milk becomes so soft and melt in the mouth kind😀❤️
