Instructions to make Rasmalai cake:
- Mix the vinegar into the milk and set aside. (You can also directly use the same amount of buttermilk instead)
- Dissolve the powdered sugar into the oil properly.
- To this, add the Rabdi essence if available, otherwise vanilla essence will also work. Add a desired yellow colour if you wish.
- To this oil-sugar mixture, sift in the dry ingredients.
- Then add the milk with vinegar and mix throughly to get a nice smooth batter.
- Bake this in your kadhai/cooker (without ring and whistle) for around 40-50mins on medium flame. But keep checking after 30 mins.
- Icing: Cut your cake into two or three slices.
- Place the base layer on your cake base/board. Soak it nicely in the milk of rasmalai.
- Then apply whipped cream. You can add yellow colour to the cream/ add some milk of the rasmalai (rabdi) to make it a rasmalai flavoured cream.
- Put some pieces of the rasmalai balls above this cream.
- Repeat the same with the next layer.
- Decorate the final topmost layer of your cake with whipped cream icing, chopped pistachios, rasmalai balls, etc.
