Instructions to make Roasted Cod:
  1. Start by desalting the cod over a period of 24 hours. Put the cod in a bowl of fresh cold water. Change the water every couple of hours to remove the salt.

  6. Preheat oven to 180c.
  7. Using just your fingers break the cod steaks into smaller pieces and remove any fish bones.
  8. In an oven proof dish add in half of the sliced potatoes. I like to line them perfectly so they are not overlapping.
  9. Then add half of the cod.
  10. Next add half of the tomatoes, onions, peppers and a small handful of olives. Drizzle with a little olive oil (you'll probably need about 3-4 tablespoons of olive at this point).
  11. Repeat steps 7,8 and 9.
  12. Bake for 40 minutes or until the top layer has a nice golden colour.
  13. While that's baking, hard boil the eggs and then let them cool enough to handle then remove the shell and slice them in circles.
  14. Once the cod and potatoes are cooked remove from the oven and let it rest for 10 minutes then add the sliced eggs.
  15. While the cod is resting prepare a lettuce and tomato side salad then serve along side it.
