Soak udad dal,chana dal,muree and fenugreek seeds in a big bowl for 6 to 7 hrs, same for rice. - Then grind to a smooth semi thick paste…mix both the batter with hand. - Keep in a dark place half covered for 8 to 9 hrs or overnight. - It increase in volume next morning. - Add salt and mix it gently.
  2. For Potato masala, heat oil…and add all tadka ingredients. - When mustard seeds start crackle, add curry leaves and green chilli. - Then add onion with little salt so that onion is cooked faster. - When onion turns transluscent, add mashed potato with all spice powders and mix it well. - Add water and mash it properly so that it is little smooth mixture. - Add chopped coriander leaves and mix it well…it's done.
  3. Heat tava, sprinkle water. - Let the water evaporates or wipe with a cloth. - Switch off the flame and take a ladle full of batter. - At the center, pour the batter and rotate it in circular motion slowly…to the edge of tava. - Then on the flame and keep in medium. - After osme time spread oil all over dosa. - When the dosa little done, spread the potato mixture at center of dosa. - Let it cook till it turns to golden colour and leave the tavapan. - Carefully insert the spatula and lift the dosa, fold it like r
