For those who does not know, Lauki Kofta = deep fried balls made Lauki kofta recipe - kofta made from bottle gourd (lauki) and besan, then deep fried in the oil. The Lauki/ Doodhi Kofta is a simple, healthy recipe where the koftas are not fried. Traditionally Kofta's are fried and loose it nutritive value. But in this Lauki Kofta I have pan fried them in a Non-Stick Kuzhi Paniyaram Pan and simmer the kofta's in a quick and simple spiced tomato gravy.
Instructions to make Shahi Lauki Kofta Curry:
- Wash and soak chana daal for 3-4 hours. Grind in semi smooth paste
- Grate lauki. Squeeze out juice and mix with daal paste. Add salt, turmeric, chilli and coriander cumin powder. Add 1 tsp oil. Mix well and put with spoon in appam pan.
- Cover and cook on low flame on both sides until done.. Make onion paste.
- Make tomato paste. Add melon seeds, cashews, chilli and peppercorns, add some water and make paste. Add oil to a pan. Add cumin, cardamom, cloves and asaefotida.
- Add onion paste. Add garlic chilli paste. Saute it's and roast until oil leaves from pan add tomato puree. Add all spices.
- Mix well and roast until done. Add cashew melonseeds paste. Roast well. Add 2 cups water.
- Add koftas and cook for 4-5 minutes. Garnish with coriander. Serve hot with paratha or rice.
Masala Paste Preparation for Curry: In a grinding jar: add ginger, garlic and onion, grind it into smooth paste( do not add water). Take it out in a bowl and keep it aside.
