  2. Make ready 4 Onions medium sized
  3. Take 1 tsp Garam masala powder
  4. Get 1 tsp Ginger garlic paste

  6. Get 1 tsp Turmeric powder
  7. Make ready 1/2 tsp Red Chilli powder
  8. Get 2 green chillies
  9. Prepare to taste Salt
  10. Get as required Oil to cook
  11. Take as required Water

Instructions to make Phutka/ Rugda:
  1. Take the phutka and wash it in running water till all the mud gets cleaned.
  2. Cut it into halves. Heat 2-3 tbspn oil in a pan and add green chilli and phutka to it. Shallow fry them till 4-5 minutes.
  3. Take all the spices as mentioned above
  4. Take 4 medium sized onion. Cut it and fry it until it turns golden brown.
  5. Let the onion cool down. Then grind it to a fine paste.
  6. Take a pan and add 2-3 tbspn oil to it. Add all the spices to it and stir it till 2 minutes. Further add the onion paste to it and cook it for next 3-4 mnts. When the spices start leaving oil, add the fried futka to it. Lastly add salt and water to make gravy. Bring it to a boil. Sprinkle some coriander leaves over it and your phutka is ready to be served. Have it with paratha, naan or plain chapati.

It's a rare eatable which is found during early monsoon exclusively in the lands of Jharkhand. Rugda is prepared using different mushrooms and spices served with the combination of rice or poori.
