- In a large kadhai heat 2 tbsp ghee and roast carrots, saute in 5-8 minutes or till the colour changes lightly.
- Now add 1 cup milk and stir well boil for till the carrots turns soft.
- Stir till the milk reduced completely and thickens.
- Now add in half sugar and mix well.
- Add 1/2 cup khoya, cardamom powder mix well.
- In another pan add khoya and sugar cook till smooth mixture.
- Transfer the prepare carrot mixture into greased plate sprinkle chopped dry fruits.
- Then pour tha khoya mixture into the carrot mixture.
- Set for 30 minutes.
- Now unmould and cut into a square pieces
- Serve carrot khoya burfi.
How to make Carrot Burfi: Heat a heavy bottomed vessel and add the grated carrot to it. Heat it to dry, stirring continuously. Repeat the same with grated coconut and keep it aside. Method for making carrot barfi, prepared by cooking grated carrots in milk, is same to that of making carrot halwa. Carrot halwa is one of my all time favourite deserts, i make it more often than any other sweets.
